There are techniques to help improve the contrast of your signs: for example, look at the three versions of our own logo below: when the red and yellow text is only on a white background it is not as legible as it could be: however, simply adding a strong black keyline around the edge sharply improves it's legibility - as does adding a drop shadow on the third example:
